Gavin didn’t believe you could eat raw artichokes. So, here it is: Gavin’s first Carpaccio di carciofi con scaglie di Parmigiano.

Marinate thin slices of artichokes (carefully cleaned beforehand) in the juice of a lemon, salt, black pepper and a turn of extravirgin olive oil. Serve with Parmesan shaves on top.
